Black Bean Quinoa Salad

Total Time: 35 Minutes

Ingredients

1 teaspoon coconut oil

1 cup chopped onion

3 cloves garlic minced

3/4 cup uncooked quinoa

1/12 cups chicken or vegetable broth

1/4 teaspoon cayenne pepper

1 teaspoon cumin

sea salt and black pepper to taste

two 15 ounce cans black beans, rinsed and drained

1/2 cup chopped fresh cilantro

Directions

  1. In a large pan, heat coconut oil over medium heat.
  2. Stir in onion and garlic and saute` until brown.
  3. Mix quinoa into the sauce pan and cover with chicken or vegetable broth. Season with cumin, cayenne, salt and pepper.
  4. Bring mixture to a boil. Reduce heat , cover and simmer for 20 minutes. 
  5. Add quinoa mixture to a large bowl.
  6. Mix in the black beans and cilantro.
  7. Serve immediately.
