2 tbsp. of pure maple syrup
1-2 tsp water
1 cup canned coconut milk
1 cup unsweetened vanilla flavored almond milk
1/4 tsp. ground cinnamon
1 tbsp. unsweetened cacao powder
1/4 cup chia seeds
Add the maple syrup and 1 teaspoon water to a medium-size bowl and whisk together to form a thin syrup. Add up to 1 additional teaspoon water.
Add the coconut milk, almond milk, and cinnamon and whisk together.
Add the cacao powder to the mixture and whisk together.
Last, add the chia seeds and whisk them into the pudding mixture.
Refrigerate overnight or for at least 4 hours prior to serving to allow the pudding consistency to develop. Serve chilled.
