Egg Free Avocado Mayo


Prep Notes

Egg free mayonnaise made with fresh avocado and heart healthy oils is a great substitute for conventional mayo which contains eggs and vegetable oils.

Ingredients

2 ripe, fresh avocados

1/4 cup high quality olive oil 

1 teaspoon of lemon juice, lime juice or apple cider vinegar

1/2 teaspoon garlic powder

1 teaspoon salt

1 tablespoon dijon mustard 

1/2 teaspoon ground black pepper

Directions

  1. Put all ingredients in a blender or food processor and blend at medium speed until mixed and emulsified.
  2. Store in an air-tight container for up to 2 days (though it tastes best if used immediately_.
  3. Enjoy!
